Wherever possible, we use the best of local produce and locally produced ingredients, from local suppliers, to maintain top quality and to give you real Scottish food experience.

Our Aberdeen Angus beef steaks are all a minimum of 21 - 35 days matured, premium cut, prepared and hung for us by Scottish master butcher John Gilmour of Tranent, master butchers since 1946, and World Steak Challenge Gold Winners in 2022!

Fresh fish is supplied daily by J.K. Thompson, the premier seafood family-run business with over 50 years of quality from just outside Edinburgh city centre. West Coast Mussels are delivered daily by Sea Magee from South Queensferry.

Our venison comes from wild Perthshire deer, and our lamb from the Scottish Borders.

Cheeses are supplied by renowned Edinburgh cheesemonger, Iain J. Mellis. Established in Glasgow in 1993, I.J. Mellis has become legendary amongst the cheese-eating elite in the city.

All our dairy produce comes fresh from the Fife Creamery.

Capital Wholesalers, a family run business, based in Edinburgh since 1968 is our supplier of local, fresh fruit and vegetables, who also supply most of the Michelin star restaurants in the city.

And Great Grogs, an independent Edinburgh wine Merchant simce 1999, supplies our wines.
